Quick tomato sauce for pasta: the answer to that autumn glut!

Ingredients

2 tablespoons olive oil

1 medium size onion

Clove garlic

1.5lbs / 750g chopped tomatoes

Method

Finely chop the onion and cook until soft in the olive oil, without colouring. Add a crushed clove of garlic and the tomatoes. Bring to the boil and then simmer gently for 10 minutes.

Allow to cool, then rub through a sieve to remove the onion, tomato skins and seeds. Return the puree to a saucepan and simmer for a further 5 minutes, season with salt and freshly ground black pepper. This can be frozen and used in stews, casseroles, and with pasta dishes.
