This month's recipe: Devonshire Apple Pancakes

Prepare your favourite pancake batter adding grated cooking apple to the mixture- 50g (2oz) apple to 100g (4oz) flour.

Serve the pancakes with an apple compote made by stewing cooking apples with cider and sweetening with honey or brown sugar.

A dollop of clotted cream to finish! (Hurrah, ed.)
